Our journey to Transformation Health Coaching; over the past two decades our work and businesses had us rushing from one engagement, meeting or job to another. It was a constant battle to have a balanced life with our with friends and family, activities, business and finding time to relax. Breakfast, lunch or dinners were often skipped, or eaten rushed and at odd times of the day. We both had a passion for food and cooking and I even worked as a food photographer, recipe designer and stylist, but when I went home I was too tired and disinterested, to be bothered. We just took, what we thought, the easy way out, a take out or a packaged food that we could reheat. This way of eating had no real thought about the nutrition or whether it was affecting our health. Exercise was running out the door to an appointment or lugging heavy gear for work. Sean traveled frequently and many of his engagements with clients were over a meal and drinks. When you travel between different timezones it’s a constant struggle with sleep deprivation, tiredness, lack of exercise or planning your meals and snacks. My photography work had me traveling and often working long days without eating all day. Long story short, we both had “burn out”. Sean had gained over 35 kilos in weight suffered digestive problems (GERD), had asthma, and had aches and pains in his legs. My immune system collapsed. I caught every flu and virus that would last eight (8) weeks and then recur within a couple of weeks, ear infections, sinusitis, bloating, irritability, depression, exhaustion, brain fog, allergies, skin rashes, head aches and bloating. I was sick, exhausted, and depressed. Most day I just wanted to stay in bed. I wasn’t living my life it was survival. My treatment was going from doctor to doctor but only received a band-aid treatment of antibiotics and told to rest, as this disorder will take two years before I would completely recover. Sean always had scripts for his digestive problems and could not leave the house without a large packet of antacids. Our chaotic lives had us forgetting the most important people, US. This was the wake up call, either we do something about our lives or exist with constant illness, suffering and burn out. We both knew change had to happen. We researched and watched the documentary “Forks Over Knives” that was our AHA moment! We check out pantry it was full of foods full of preservatives, additives, refined sugars, fat and with very little nutritional value. We were not eating a real foods so we changed to a Whole Foods Plant Foods. The change happened within 2 weeks, I had more energy and started living again and within a few months, Sean lost 35 kilos. We become so passionate about the improvement in our health, we both returned to further studies in health, cooking and nutrition, Institute of Integrated Nutrition (New York) graduated Health Coach, Professional Whole Foods Plant Based Chefs (New York) and trained with Dr Pam Popper from Forks Over Knives as a certified Food Over Medicine. What is Transformation Health Coaching?
Transformation Health Coaching informs and supports you to achieve health goals and behavior adjustments. It’s a process that facilitates active, sustainable behavior change by challenging you to develop your inner wisdom, identify your values, transform your goals into actions, wellness authority and gives you a supportive mentor who motivates positive health choices.
We spends time to empower you, holistically and we develop strategies to overcome distractions and obstacles, whether it’s to lose weight, reduce stress, sleep better, exercise plan, hydration, meditation or to lower the risk of chronic diseases.
Our population is aging, although chronic diseases are affecting our children too. Today chronic diseases are the leading cause of illness, disability and death in Australia, accounting for 90% of all deaths in 2011 (AIHW 2011b). 80% of chronic illness could be avoided through diet and lifestyle changes.
Chronic diseases can range from mild conditions such as short- or long-sightedness, dental decay and minor hearing loss, to debilitating arthritis, stroke, obesity, hypertension, high cholesterol and low back pain and to life-threatening heart disease, diabetes type II, respiratory diseases like COPD, asthma and cancers. Four common behavioural risk factors—smoking, physical inactivity, poor nutrition and harmful use of alcohol.
Doctors don’t have the time we need to get us back on track. It’s not that they don’t want to help, but rather they only have about 10 – 15 minutes to spend with each patient. That means they may only be able to order some tests and prescribe a medication to relieve the symptoms. They also can usually only address one problem at a time. A health coach can spend the time to help someone listen and unravel out your personal health and lifestyle issues. It can be confusing with all the conflicting information you read in the media and the rival diets and the studies being reported. Coaching will support you by concentrating on the health and diet information that’s relevant to you as an individual. We have studied over 100 different diets on offer some fads, some unsustainable over a long period of time and others that really do not work. Weight loss is not about eating less, calories in and calories out, all calories are not equal. For example a cupcake that is 200 calories is not equal to a piece of fruit also 200 calories. We will provide step-by-step tools to create permanent sustainable changes for health and well-being.
We work as a personal coach, one-on-one and with groups with our seminars, plus implement corporate programs and co-ordinate with other professionals.

Have a “kitchen rescue” reset and be shown how to eat healthy and design the right meal plan. We are both trained through Rouxbe Plant-Based Professional Chef School in New York. Penelope has cooked vegan dishes, styled food for cookbooks, magazines and advertising and workshops over two decades.
Sean’s a Natural Foods Chef, Whole Foods Plant-Based (WFPB), he also facilitates workshops, cooking classes and seminars, kitchen rescues, teaches tips and facts on being vegan, raw and gluten free cooking, shows how you can plan quick meals for busy people yet still be healthy and design delicious recipes. His passion for cooking led him to undertake several workshops, class demonstrations and courses over the past decade learning many cooking styles from rustic French Provincial, Italian, Spanish and Modern Australia cuisines from top chefs.
